Our Story

At Mr. Gallo Taqueria, every taco tells a story.

Our founder, Hilario cantera, has dedicated more than 30 years of his life to the culinary arts. Throughout his career, he learned that great food is about much more than recipes—it is about tradition, family, culture, and the joy of bringing people together around a table.

After decades of experience in professional kitchens, Mr. Pollo decided to pursue a dream that had been growing in his heart for years: sharing the authentic flavors of Mexico with his local community. Three years ago, that dream became a reality with the opening of Mr. Gallo Taqueria.

What started as a small passion project quickly became a place where friends, families, and food lovers could experience the warmth and richness of Mexican cuisine. Every dish is inspired by traditional recipes, fresh ingredients, and the vibrant culinary heritage that has been passed down through generations.
